Raw Margarita Pizza might sound a bit strange, but it’s honestly the most delicious pizza ever. Does it compare to a traditional pizza that’s dripping in melted cheese? Of course not, however, if like me you are avoiding gluten, dairy and horrible additives kick (because they make me feel awful), my raw pizza will make you feel amazing.
First off you need a raw base. Now, you could look up a raw flax cracker recipe, but I must confess that I bought raw Paleo wraps, which are actually delicious. I prefer them as a pizza base than as a wrap – go figure!
I also used an insanely delicious cream cheese from Kite Hill. This is the ONLY vegan cream cheese that I like.
1 raw wrap
2 tbsp sun dried tomatoes, packed in oil, chopped
2 tbs raw almonds
1 tbsp avocado oil
2 tsp balsamic vinegar
4 tbsp Kite Hill cream cheese
1/2 cup cherry tomatoes, halved
A handful of fresh basil leaves, stems removed
A handful of pitted Kalamata olives
Cut the wrap into triangle shapes
Blend the sun dried tomatoes, almonds, oil, and vinegar in a high speed blender, until it resembles a smooth-ish, but still a bit crunchy, paste.
Smooth the mixture over the wrap
Fluff up the cream cheese with a fork, and spoon on top of your pizza
Top with cherry tomatoes, basil leaves, and olives
