What to do with all those pumpkin seeds right? Don’t toss them!! You can roast them up and turn them into candy with this easy recipe.
INGREDIENTS
- 1.5 cups pumpkin seeds
- 2 tbsp coconut oil
- 3 tbsp date or maple syrup
- 1 tbsp ground cinnamon
- 1/8 tsp sea salt
- 1 tbsp date sugar (for added crunch)
DIRECTIONS
- Wash and dry your pumpkin seeds and set them aside
- Pre-heat oven to 350 degrees F
- Place the oil, syrup, cinnamon and salt in a small pan and heat until it begins to bubble. Remove from the heat and stir int the seeds and the sugar.
- Spread over a parchment lined baking sheet.
- Bake for 10 minutes, or until they start looking well-browned and crunchy. Leave them cool.
