Cinnamon Sugar Pumpkin Seeds

What to do with all those pumpkin seeds right? Don’t toss them!! You can roast them up and turn them into candy with this easy recipe.

INGREDIENTS

  • 1.5 cups pumpkin seeds
  • 2 tbsp coconut oil
  • 3 tbsp date or maple syrup
  • 1 tbsp ground cinnamon
  • 1/8 tsp sea salt
  • 1 tbsp date sugar (for added crunch)

DIRECTIONS

  1. Wash and dry your pumpkin seeds and set them aside
  2. Pre-heat oven to 350 degrees F
  3. Place the oil, syrup, cinnamon and salt in a small pan and heat until it begins to bubble. Remove from the heat and stir int the seeds and the sugar.
  4. Spread over a parchment lined baking sheet.
  5. Bake for 10 minutes, or until they start looking well-browned and crunchy. Leave them cool.
