This spring scramble with quinoa is energizing and delicious which is important because what’s the very first opportunity you have to build beauty in the morning? If you’re like most of us, it’s breakfast. Unfortunately it’s also the meal that’s most likely to be ditched or forgotten as you rush out the door. While skipping breakfast isn’t bad, it’s a missed opportunity to set the tone for the way you’ll look and feel for the rest of the day. Of course, plenty of people who do make time for breakfast are missing beauty opportunities as well, since they’re grabbing muffins, bagels, waffles, boxed cereal or breakfast bars that spike blood sugar and leave them in an energy slump by mid-morning. That’s not to mention the caffeine jolt from sugary coffee, which stresses our adrenals and boosts the aging stress hormone cortisol.

So what’s a more beautifying option? You want your first meal of the day to combine protein, veggies and healthy fats—and be quick and easy. You could blend up a green smoothie, or cook up something warm, like my Spring Breakfast Scramble, below. Eating protein and healthy fats in the morning gives you sustained energy that doesn’t cause the sharp rise and fall in blood sugar that contributes to both wrinkles and blemishes. Blood sugar balance is critical for beauty, hormone balance and focus all day! Protein is essential to build healthy hair, nails and collagen, and healthy fats burn quickly for energy and keep your metabolism going strong so you continue to burn fat throughout the day. This recipe also makes a quick and light dinner; bulk it up by adding any veggies that you have in your fridge.

Recipe is for two.

Ingredients 

  • 1 tsp coconut oil
  • 2 scallions, roughly chopped
  • 2 handfuls sliced mushrooms
  • 1 cup chopped thin stem asparagus
  • 1 tbsp chopped chives
  • 1/2 cup cooked quinoa
  • 4 pastured eggs, beaten
  • sea salt
  • ground black pepper
  • turmeric

Instructions

  1. In a medium skillet, melt coconut oil and cook scallions, mushrooms, and asparagus over medium heat, about 5 minutes, until mushrooms reduce.
  2. Drain any excess water and add chives, quinoa and beaten eggs.
  3. Scramble until eggs are cooked, about 5 minutes more. Season with spices and serve.
  4. Enjoy your spring scramble with quinoa!
