I love a Waldorf salad, especially one that isn’t coated with too much creamy dressing. Why do I love it? Because it contains 3 ingredients that are so HEALTHY. This is my favorite crunchy salad!

Apples: The most over-looked super food. I eat one a day. And, do remember to keep the skin on them because that’s where you’ll find all the Nutrients.

Walnuts: One of the healthiest nuts ever, and important as part of a breast cancer prevention nutritional program.

Spinach: I love adding all this healthy iron to my tasty salad.

Boost: I have added fresh pomegranate seeds for an extra anti-oxidant boost.

This salad took me all of 10 minutes to make! It is crunchy, filling, tasty, and makes a perfect lunch when served with a whole wheat pitta, gluten-free crackers, and even a cup of organic soup.

Serves 2

Ingredients:

2 sticks celery, chopped

2 organic Fuji or Granny Smith apples, cored and chopped

1 cup walnuts

2 cups organic baby spinach leaves

2 tbsp Just Mayo

1 tbsp lemon juice

Sea salt and pepper to taste

1 cup fresh Pomegranate seeds

Instructions:

Place all chopped veggies and spinach leaves in a bowl.

Mix the dressing ingredients in a small bowl.

Add the dressing ingredients.

Place in serving bowls.

Top with seeds.
