This smoothie is literally the most delicious treat you’ve ever tasted. It’s better than ice cream, and so incredibly healthy. You obviously have to love coconut (it’s all in the name right – Countess Coconut Smoothie) – but who wouldn’t when it has so many benefits. Coconut is full of manganese, necessary for bone health, and copper and iron which both assist in the formation of red blood cells. You can also add a handful of frozen blueberries or even some pineapple or mango if you want to take away from the pure coco-nutty taste. Enjoy!
I also want to go on record as flagging this smoothie as a treat! Coconut oil is saturated fat (yes, a plant-based fat, but it’s saturated nonetheless), there’s coconut butter, and the dates, while a whole fruit, also adds sugar to this smoothie. While nothing will take the place of my beloved green smoothie, I love the Countess Coconut Smoothie as an afternoon treat or on a particularly hot day.
INGREDIENTS:
- 2-ounces coconut water
- 4 -ounces almond milk
- 1 tbsp virgin coconut oil
- 1 tbsp raw coconut butter/meat (the only one I’ve found is the coconut “butter” by Artisana, which is sold at Wholefoods.)
- 1 cup raw almonds
- 4 pitted dates
- 1 tsp vanilla essence
- 1 cup crushed ice
DIRECTIONS:
- Throw all your ingredients in your high-speed blender and you’re set. Enjoy!
This is not a smoothie I recommend making in advance (you may know that some of my smoothie recipes can be saved in the refrigerator for bulk blending) – the ice will certainly melt, and it really is a treat you want fresh out of the blender.
