Cauliflower Mash

Ingredients:

  • 1 large organic cauliflower, chopped (whole, not just florets)
  • 2 tablespoons veggie broth
  • 2 cloves garlic, peeled and minced
  • 1 teaspoon lemon zest
  • Sea salt and freshly ground pepper, to taste

Directions:

  1. Steam the cauliflower for 15 minutes or until tender when a fork is inserted. Transfer to a high-speed blender or food processor. Add the other ingredients and blend until smooth.
  2. Serves 4
