Beet and Carrot Slaw

Ingredients:

Slaw

  • 2 large beets, peeled and grated
  • 4 large carrots, peeled and grated
  • 1/2 cup sunflower seeds
  • 1/2 cup fresh flat-leaf parsley, chopped

Dressing

  • 1 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon raw honey
  • Sea salt, to taste.

Directions:

  1. In a large bowl, combine the slaw ingredients. In a separate bowl, whisk together the dressing ingredients. Add the dressing to the slaw and mix well.
  2. Serves 2
