Ingredients:
Slaw
- 2 large beets, peeled and grated
- 4 large carrots, peeled and grated
- 1/2 cup sunflower seeds
- 1/2 cup fresh flat-leaf parsley, chopped
Dressing
- 1 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon raw honey
- Sea salt, to taste.
Directions:
- In a large bowl, combine the slaw ingredients. In a separate bowl, whisk together the dressing ingredients. Add the dressing to the slaw and mix well.
- Serves 2
