Cilantro Jalapeno dressing

When I ‘m eating a huge bowl of leafy greens, the dressing is the game-changer. I’m a little tired of a simple olive oil/lemon combo right now, so I decided to create a gorgeously green dressing with a bit of a kick. My Cilantro Jalapeno dressing is as hot as it’s refreshing. It’s also very addicting. You can drizzle it on salads, veggies, grilled tofu, or whatever your heart desires.

Ingredients

1/2 cup fresh cilantro leaves

1/2 medium Jalapeno chile, de-seeded & chopped

1 cup grape seed or avocado oil (totally use avocado if you can find it because it’s so healthy

1 tbsp apple cider vinegar

Juice of half a lemon

1 tsp lemon zest

1 tsp raw honey

A pinch of sea salt to taste

Instructions

Toss all the ingredients in a high speed blender, and blend until smooth.

Storage: It will keep for up to a week in an airtight jar.
