I just got a You Tube comment from a lovely girl who said that she opens her fridge to make a salad and she just can’t deal with the thought of sorting through all the bags and her crisper drawer…never mind all the chopping! I SO get it. This is why it sometimes seems easier to eat meat cos all you need to do is slap a burger or hunk of meat in a pan (or on the grill) and garnish it with a handful of veggies, right?
So here are my 3 tips to making veggie preparation EASY:
1. Plan Ahead: When you get back from the farmers market/grocery store, get all your produce out on the counter and make a written or mental note of which veggies are for which recipe this week. I love to plan my week ahead on Plan to Eat. It saves so much time, money and waste!
2. Wash and Chop right away! This is KEY because otherwise you will stuff the bags in your fridge and they might not see the light of day until they’ve wilted or gone bad. Store leafy green and lettuce in zip lock bags or even better, Neat-Os bags. Add a sheet of kitchen towel to absorb excess moisture. Store your chopped veggies in glass Pyrex-type containers with lids, or BPA-free plastic containers.
3.Make smoothie bags – this is an easy way to make sure you get your quota of healthy nutrients every day.
