A vegan mint chip smoothie that’s actually healthy is just the ticket for this Holiday! During the holidays, I definitely indulge in sugary desserts and other yummy treats and usually I feel guilty about it. Fear not because this smoothie is amazingly delicious without the guilt. The green tea powder kicks it up a notch, fills it with fiber, and gives you a gentle boost of energy, plus this smoothie feels like an indulgent treat.
Mint Chip Smoothie
- 8 ounces almond milk (homemade is best!)
- About 5 fresh mint leaves
- 1tbsp Matcha green tea powder + a pinch for sprinkling
- 3 dates, pitted
- 1 tbsp mini chocolate chips (I love the Enjoy Life ones) + a few for sprinkling
Instructions
- Blend all the ingredients really well – you have to blend a little more than usual to break up chocolate chips.
- Pour into a mason jar and serve with a sprig of fresh mint.
- Enjoy your vegan mint chip smoothie!
