Teff is such a nutty and deliciously healthy flour that it lends itself beautifully to uber-nutritious Teff almond butter cookies. Remember Teff is full of iron and it’s also very good source of dietary fiber, protein, amino acids, Vitamn C and Calcium. It’s naturally gluten-free. I get my Teff Flour from Bob’s Red Mill.
To make these Teff Almond Butter Cookies a little more kid-friendly, I added some chocolate chips.
Teff Almond Butter Cookies
Yields 24
Ingredients
- 1 1/2 cups Teff Flour
- 1/2 tsp sea salt
- 1 tsp ground cinnamon
- 1/2 cup maple syrup (or Yacon Syrup if you are diabetic)
- 1/2 cup coconut oil, liquified
- 1 tsp vanilla extract
- 1 cup raw almond butter
- Enjoy Life Mini Chocolate chips (optional)
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment, set aside.
- Combine the Teff flour, salt and cinnamon.
- In a food processor fitted with the “S” blade combine the syrup, oil, vanilla, and almond butter – process until smooth.
- Add the liquid ingredients (+ the choc chips if using), to the dry ingredients and combine well.
- Scoop out dough with a spoon into walnut size balls. Roll between hands t form a ball.
- Place on the prepared cookie sheet and gently press down with the tines of a fork to flatten.
- Bake for 13-15 minutes then cool completely (if you try to move them before they are cooled, they will fall apart), on the baking sheet over a wire rack before serving.
