I love this super easy vegan curry of almost any description, however, making a curry from scratch can be rather laborious -especially if you are not up with all the different spices that you need to make a really great dish. This is why I love Seeds of Change Indian Simmer Sauces. I can make a delicious vegan curry for the family in under 15 minutes.
My favorite is the Jalfrezi because it’s hot (which I like) and vegan. Hot and Vegan my friends!!
You can combine any veggies you like with it, but this is one of my favorite recipes for a super easy vegan curry. This serves two.
Ingredients
- 2 tbsp veggie broth
- 1/2 onion, minced
- 1/2 block extra firm tofu, drained and cubed
- 1 medium zucchini, cubed
- 2 carrots, sliced
- 1 cup sugar snap peas
- 1 red or yellow pepper, de-seeded and sliced
- 1/2 cup brown mushrooms, sliced
- 1 jar of Seeds of Change Jalfrezi sauce.
- 1 handful of fresh cilantro, chopped
Instructions
- In a cast iron wok or heavy bottomed pan, heat the veggie broth. Add the onions and fry of low heat until softened. Add all the other ingredients. Make sure the sauce is well combined. Turn the heat low, and simmer for 10-15 minutes, or until the veggies are tender, but still crisp.
- Serve over a bed of brown rice or quinoa and top with fresh cilantro.
