Granola is so easy to make, especially this super crunch granola. Some might argue it’s easier to just buy some. But if you pay attention to the ingredients in store bought granola’s you find that they are filled with unnecessary sugars. When you make your own you can control what ingredients you are using and how much. This Super Crunch Granola calls for Goji berries which is a powerful super fruit with lots of Vitamin A, C, protein and fiber.

Super Crunch Granola (serves 6)
Ingredients:
- 2 cups rolled gluten-free oats
- 1/2 cup walnuts, chopped
- 1/2 cup raw sunflower seeds
- 1/2 cup raw almonds, chopped
- 1/2 cup pecans, halved
- 1/2 cup chia seeds, soaked overnight
- 1 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 3 tablespoons raw virgin coconut oil
- 1/2 cup maple syrup
- 1/2 cup brown rice syrup
- 2 tablespoons water
- 1 tablespoon vanilla extract
- 1/2 cup goji berries
- 1/2 cup dried apricots, chopped.
Directions:
- Preheat the oven to 300 degrees F. Mix all the dry ingredients together in a large bowl. Melt the coconut oil, syrups, water, and vanilla in a small saucepan. When fully melted, mix it into the dry mixture.
- Spread the granola over a parchment-paper-lined baking sheet and bake for about 40 minutes, turning over the granola every 15 minutes and scooping the crispy bits from the sides of the pan into the middle. Try not to break up the clusters when you turn the granola. For the last 5 minutes of cooking, add the fruit.
- Allow the granola to cool completely before spooning it into an airtight canister for storage in a warm, dry spot. Your granola should keep well for up to three weeks.
