Sticky Fig Granola

I found some beautiful dried figs in my farmers market on Sunday, so came home and made one of my favorite granola recipes to date. I added ginger, as I love the pairing of the fig and the ginger. I also added ground flax seed so that it’s full of healthy Omega 3 fatty acids. If you are totally lost for a last-minute Holiday gift, you could make a batch of this and pour some into pretty mason jars for gifts.

Ingredients:

  • 2.5 cups gluten free old-fashioned oats
  • 1 cup sunflower seeds
  • 1 cup walnuts, chopped
  • 4 tbsp ground flax seed
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp sea salt
  • 5 tbsp coconut oil
  • 4 tbsp maple syrup
  • 1.5 cups dried figs, chopped

Instructions:

  1. Pre-heat oven to 375 degrees F
  2. Place all the dried ingredients (except for the dried figs), in a large bowl.
  3. Melt the coconut oil and maple syrup in a small saucepan, then add to the dry ingredients and combine well.
  4. Spread over a parchment paper lined baking sheet, and bake for around 20 minutes or until nicely browned – set a timer, as you will need to turn/stir the granola half way through cooking (I get a spatula and scoop the browned bits from the edges of the pan into the center – does that make sense?).
  5. After you remove from the oven, stir in the figs, making sure they are separated (they do tend to stick together).
  6. Let it cool completely before placing in an airtight container or jar. It will stay good for up to 1 month.
