It’s now official that giant food corporations in the U.S. are unable to guarantee the safety of their frozen food products. There have been an alarming number of cases of salmonella from all kinds of leading brand frozen entrees- from pizzas to pot pies, nothing seems safe. Part of the problem lies in the fact that the supply chain has become so complex and global that in one frozen entree, you could be eating up to 50 ingredients from dozens of different regions or countries. All this leads me to want to have absolute transparency when it comes to what I put in my mouth. I wrote The Gorgeously Green Diet because I wanted you to be aware of exactly what is in your every mouthful. A large section of the book is devoted to your “pantry purge” where I invite you to scrutinize all your ingredients and to re-stock with clean, non-toxic and healthy staples. I also encourage you to cook from scratch as much as possible, as this is the only way you can be sure that your are eating what you think you are! Food safety starts at home – it’s about getting as close to the source of your food as possible. We can’t afford to bury our heads in the sand anymore. What we once thought was convenient, is now very inconvenient because of the problems and worry it can cause. Taking fifteen minutes out to make a veggie pot pie from scratch or a homemade pizza is time very well spent. Check out some of the many easy from-scratch recipes in the book.
