This month it’s asparagus. This delicious veggie is very good for your heart and for maintaining a healthy gut flora. If you manage to get to a farmer’s market, you should see it on most every stall. I love that asparagus requires very little preparation. You can either steam them for about 10 minutes (they want to be tender but still have a bit of bite) and then serve dipped in melted butter. Or my favorite way to prepare them is to lay them on a baking sheet, drizzle with olive oil, and then grate a generous amount of Parmesan cheese all over them – a little sea salt and freshly ground pepper – finally into a hot oven (400 degrees F) for 10-15 minutes. This for me, is a taste of heaven.
I love asparagus and typically steam it but your recipe using the oven sounds wonderful, I can’t wait to try it!
Try roasting at 350 degrees for about 20 minutes – toss with a little olive oil first and then sprinkle fresh grated parm on top when they come out of the oven – delish!
Very good lightly sauteed in a pan with a bit of olive oil, too–I sprinkle a little kosher salt on and roll them around til they are tender. Unbelievable!
We actually had asparagus tonight. I just drizzled with a little olive oil and sprinkled with a little garlic salt, popped them in the oven for about 10-15 minutes at 350. They came out pretty well. I love the idea of Parmesan though. Yum!
