Raw Zucchini Cilantro Dip


The following raw zucchini cilantro dip uses the amazing health benefits of coriander (cilantro), a herb that has anti-inflammatory properties as well as helps with the digestion of fat!

As the cooler months of winter approach it’s easy to start eating more ‘comfort foods’ and holiday treats. Most of these foods are high in carbohydrates, and while they can provide an initial comfort by temporarily increasing serotonin (a ‘feel good’ neurotransmitter), excessive consumption of refined carbohydrates and sugar can result in weight-gain and decreased energy.

Consuming raw vegetables allows the body to derive nutritional benefit from enzymes and vitamins that are heat sensitive. Finding inventive ways to include more uncooked vegetables into your diet during the winter months is a great way to maintain consistent energy levels and optimal nutrition.

Ingredients 


  • 1.5 Zucchini
  • 1 Tbs Nutritional Yeast
  • 1 Tbsp Tahini
  • .5 Cup Raw Sunflower Seeds
  • 3 Garlic Cloves
  • 1/4 Cup Cilantro Leaves
  • Himalayan Sea Salt (to taste)
  • Juice from 1 freshly squeezed lemon (add juice from another lemon for salad dressing consistency)

Instructions 

  1. Blend all ingredients in a high speed blender or food processor till smooth 
Enjoy as a dip with carrots & cucumber, as a salad dressing, or as an appetizer to dip with whole wheat pita.
  2. Enjoy your raw zucchini cilantro dip!
