This recipe for raw coconut yogurt is super simple and delicious! I love to eat this as a quick breakfast with some granola and fruit. One of my favorite granola recipes this yogurt can perfectly compliment is my super cranberry orange granola. Its yummy, crunchy, and extremely healthy. Both of these recipes are super healthy and vegan!
This recipe serves four.
Ingredients
- 2 cups young coconut meat, fresh or frozen
- 1/4 cup raw coconut water or filtered water
- 1/4 teaspoon probiotic powder or 2 capsules’ worth of powder
Instructions
- Place all the ingredients in a high-speed blender and process until smooth. Pour the mixture into a large Mason jar (only fill to 3/4 full) and leave overnight in a warm spot. (I leave mine in the oven with the light turned on because it’s always a little warm in there.) After 8 to 12 hours, remove from the warm spot, open carefully, and mix well to remove bubbles.
- Store in the fridge for up to four days.
