This pumpkin pie smoothie is yet another a reason to eat more pumpkin. Pumpkin is one of the very low calorie vegetables and the color orange is a dead giveaway that it is loaded with and anti-oxidants, beta-carotene.
Recent research indicates that a diet rich in food containing beta-carotene may reduce the risk of developing certain types of cancer and offers protection against heart disease. Beta-carotene offers protection against other diseases as well as some degenerative aspects of aging.

Ingredients
- 1 cup pumpkin puree
- 2 tablespoons almond butter
- 1/2 frozen banana
- 2 dried Medjool dates, pitted
- 1 teaspoon pumpkin pie spice, store-bought or homemade
- 1 tbsp ground flax
- Coconut whipped cream (optional)
- Extra pumpkin pie spice, to garnish (optional)
Instructions
- Add the pumpkin, coconut milk, almond butter, banana, dates, and spices to a blender and process on high until smooth.
- Divide between two glasses and top with coconut whipped cream and a dusting of pumpkin pie spice, if desired.
- Enjoy your pumpkin pie smoothie!
