My Protein Energy Balls are one of the healthiest snacks you can eat. They not only make for the perfect pro/post workout snack due to their high protein content, but they’ll also give you a tremendous boost of sustainable energy – not the kind of sugar rush you get from a refined sugar snack, or the jitters that you get from coffee, but a beautiful slow lift to get you through until your next meal.
If you don’t have time for breakfast, pop a couple of balls and you are good to go!!
Even better, they are no-bake, so very quick and easy to make:
Ingredients
Yields about 12 balls
1 cup almond butter (you can use peanut butter if you are allergic to tree nuts)
2/3 cup sunflower seeds
6 dates pitted
1/2 cup old fashioned rolled oats
1 tbsp Erythritol
1 tsp vanilla extract
2 tbsp of raw, virgin coconut oil
1 scoop pea protein powder
1 pinch Himalayan sea salt
1/2 cup cacao nibs (optional, but does take the balls to a whole new level!)
Coating options
This is the fun part because you get to roll your balls in amazingly beneficial super foods such as Matcha Green Tea, Turmeric Chai Blend, Cacao Nibs, Acai Powder, or if you want to go old-school, some good old unsweetened, shredded coconut will do.
I recommend rolling your balls in Erythritol first, and then rolling in the coating of your choice.
Instructions
Add all ingredients except the nibs into the bowl of the processor.
Pulse until it forms a textured paste. Do NOT over process, you still want crunch in there.
Place the bowl of the processor in the fridge for 30 minutes to allow batter to firm up.
Scoop out tsp sized balls, and roll in the coating of your choice.
Store in an airtight container in your fridge for up to 2 weeks.
