What can I say – I love this woman! Megan is the brains behind MegUnprocessed – A truly amazing blog devoted to proving that you don’t have to be a chef to prepare delicious plant-based meals. Megan inspires me everyday with her amazing pictures on Instagram, and her focus on being healthy! 

 


SU: What inspired you to create your blog?

ML: I wanted to inspire and show others that living a plant-based lifestyle is a lot easier than one might think. At first people think that plant-based cooking is so difficult or doesn’t taste good. I wanted to debunk that myth by sharing my easy, delicious recipes with everyone. I’ve always been a big foodie and I promise I wouldn’t eat this way if it didn’t taste good! 

 

SU: How did you take the first steps toward becoming “unprocessed”?

ML: I started checking labels. I stopped eating most things that came in packages especially if they had more than 5 ingredients or ingredients that I couldn’t pronounce. I also started buying organic and non-GMO. I believe this is a good starting place for anyone who wants to start feeling better by not eating so many processed foods.

 

SU: What has been your biggest challenge both personally and business-wise?

To not get discouraged when things don’t happen as fast as I’d like. I have to remind myself everything happens at the right time, when it’s suppose to happen. If it doesn’t happen at all, then that’s because something better is coming instead.

 

SU: What makes your blog different from others out there?

ML: Most of my recipes are 7 ingredients or less, and serve one to two people. I create recipes that don’t require you to go to the grocery store and buy ingredients that you’re only going to use once. All of them include things that you probably already have in your kitchen.

 

When I see recipes that have a long list of ingredients, it doesn’t inspire me to get in the kitchen. It makes me want to run from it! That’s why I keep mine short and easy, to get even the non-cooks creating in the kitchen.

 

I also include the health benefits of each of my recipes. If you’re looking for something to eat for energy or to assist in reducing cholesterol, you can find these benefits under each recipe on my site.

 

SU: What is your favorite form of social media, and why?

ML: Instagram is my favorite form of social media for a couple of reasons. I love pictures especially pictures of gorgeously prepared food and travel! It’s also a great way to interact with others who are on the same journey or share the same passions.

 

SU: What motivates you to jump out of bed every morning?

ML: My future motivates me to get out of bed in the morning. I get to do something I’m passionate about each day and grow it into a successful company. I believe everyone’s best days are ahead of them so it’s exciting to wake up healthy each day!

 

SU: What is your morning routine?

ML: When I first wake up, before I get out of bed I give thanks and visualize my day. Starting my morning with gratitude helps me set the right intention for the day. I have two morning cocktails before I eat anything. First is warm lemon water with dashes of cayenne pepper. The second is warm apple cider vinegar water with turmeric and black pepper.

 

SU: 3 Tips for newbie’s to a Whole Food Plant-based diet?

  1. Start slowly eliminating the dairy and meat. Start with one day a week and then work up to three and four, etc. Quitting cold turkey isn’t always the best way. Don’t think it just happens over night.
  2. Know that it can take up to two weeks for your taste buds to change. After that you’ll start to notice you’ll crave fruits and veggies. And you wont crave meat or dairy anymore.
  3. Keep it interesting. Don’t make the same salad or casserole over and over. Look for new recipes, play with different seasonings, mix it up! There’s so many ways to make plants delicious and switching it up will keep you eating this way!

 

If you could take 2 food items to a desert island (that you’re going to be stuck on for a year) what would they be?

  1. Apples because it’s one of the most nutritious foods and I love them!
  2. Coconuts because I could drink the water and eat the meat!

 

SU: Imagine that money is no object (that you’ve just won billions in the lottery), which charity/cause would you donate to?

ML: One thing I would donate to is helping change school lunch programs. I’d like to help remove the chemically processed foods and have more organic plant-based foods for children to eat.

 

SU: What do you hope to be doing 5 years from now?

ML: In 5 years from now I will still be creating recipes to share on my blog and in my future cookbooks, running the number one production company for Health and Wellness videos and traveling the world with my own family and friends.

 

SU: What is your all-time favorite quote?

ML: I have so many favorite quotes but two of my favorite food related quotes:  1. Let food be thy medicine 2. Eat it if it grows on a plant, skip it if it’s made in a plant
