I LOVE this Mediterranean Salad Bowl recipe, it could NOT be easier, and it is so delicious. And the real fact about this bowl is that you can put anything in here – It’s a great way to clean out the fridge and make a delicious, complex lunch!!
INGREDIENTS
- Quinoa tabouli (which is just cooked quinoa with lots of chopped parsley + lemon)
- Arugula
- Chopped organic red pepper
- Chopped organic cucumber
- Marinated artichoke hearts
- White beans
- Tofu ricotta or any dairy-free cheese option
- Kalamata olives
- Olive oil + balsamic dressing
Arrange all ingredients in a bowl, and ENJOY!
