I was craving chai and an oatmeal cookie today – probably because the weather has just turned, and I want to be all cozy and snug with a cuppa tea and a sweet treat. So I pulled out my ingredients and got going. These healthy little cookies are low in sugar and gluten-free. Did I mention that they are also vegan!

Ingredients:

  • 1/2 cup Earth Balance Spread
  • 1/4 cup coconut oil
  • 1/2 cup date sugar
  • 1/2 cup date syrup (you could use brown rice syrup, or Maple in a pinch)
  • 1/2 cup rolled oats
  • 1 cup gluten-free flour
  • 1 tsp baking soda
  • 1/8 tsp sea salt
  • 3/4 cup soy or almond milk
  • 2 – 3 droppers of chai extract
  • 8 pitted dates, chopped

Instructions:

  1. Pre-heat oven to 350 degrees F
  2. In a stand mixer, cream the spread, oil and sugar. Add the syrup.
  3. Add the dry ingredients, and milk and make sure all is well combined.
  4. With the mixer still mixing, add the chai extract, and finally the pitted dates.
  5. Form little ping pong size balls in your hands and lay them 2 inches apart on a greased baking sheet. Squish them a bit flatter with a spatula (you want a cookie, not a ball!).
  6. Place in oven for 25 minutes.
  7. Place on wire rack to cool.

They will store in an airtight container for up to 3 days.
