I was craving chai and an oatmeal cookie today – probably because the weather has just turned, and I want to be all cozy and snug with a cuppa tea and a sweet treat. So I pulled out my ingredients and got going. These healthy little cookies are low in sugar and gluten-free. Did I mention that they are also vegan!
Ingredients:
- 1/2 cup Earth Balance Spread
- 1/4 cup coconut oil
- 1/2 cup date sugar
- 1/2 cup date syrup (you could use brown rice syrup, or Maple in a pinch)
- 1/2 cup rolled oats
- 1 cup gluten-free flour
- 1 tsp baking soda
- 1/8 tsp sea salt
- 3/4 cup soy or almond milk
- 2 – 3 droppers of chai extract
- 8 pitted dates, chopped
Instructions:
- Pre-heat oven to 350 degrees F
- In a stand mixer, cream the spread, oil and sugar. Add the syrup.
- Add the dry ingredients, and milk and make sure all is well combined.
- With the mixer still mixing, add the chai extract, and finally the pitted dates.
- Form little ping pong size balls in your hands and lay them 2 inches apart on a greased baking sheet. Squish them a bit flatter with a spatula (you want a cookie, not a ball!).
- Place in oven for 25 minutes.
- Place on wire rack to cool.
They will store in an airtight container for up to 3 days.
