I love this simple, delicious, refreshing Kale Beet Salad salad. It makes the most of the fabulous winter crop, and is such a nice change of pace from the heavy meals and overwhelming sweets of the holidays!
Ingredients
- 2 cups finely chopped dino kale
- 2 cups romaine lettuce
- 1 beet (spiraled)
- 2 cups chopped apple
- 1 cup toasted walnuts
- Champagne vinaigrette dressing

- Chop romaine lettuce.
- Spiral whole beet.
- Chop apple.
- Mix kale, romaine and dressing together.
- Add apple, walnuts and spiraled beet on top.
