I know the idea of a “healthy” brownie is a bit bizarre, but this recipe goes someway to making a traditional brownie a lot healthier by virtue of the fact that I am not using eggs or refined white sugar.
Flax Eggs (for 2 “eggs”) Combine 2 tbsp of ground flax seed with 6 tbsp water. Leave to thicken for 30-60 minutes. Just prior to using, add 1/4 tsp baking powder.
Ingredients:
- 1/2 cup vegan shortening/butter (I like Earth Balance), softened
- 1 cup coconut palm sugar
- 2 “flax eggs” (see recipe below)
- 1/2 cup all-purpose flour (you could go with a gluten-free blend if you want)
- 1/2 cup cacao powder
- 1 tsp vanilla extract
- 2 tbsp coconut milk (you can use almond if you don’t have coconut)
- 1/2 cup Enjoy Life Mini Chocolate Chips
Instructions:
- Pre-heat oven to 350 F
- Cream “butter” and sugar together in a large bowl.
- Add the flax eggs and combine well.
- In a separate bowl, combine the flour and cacao powder.
- Mix the dry ingredients into the wet, combining really well.
- Mix in the vanilla extract, coconut milk and choc chips.
- Pour into a greased baking pan and bake for about 20 minutes or until the sides are beginning to get crispy.
