These healthy oatmeal goji berry cookies are perfect because I had a hankering for a really great traditional oatmeal cookie, but I wanted to make the healthiest version I could drum up. So – here is the result and I have a feeling that you will love them as much as I as an afternoon treat. You can also pop them in your kid’s lunch boxes (subbing out the goji berries for raisins).
This recipe yields around 14 healthy oatmeal goji berry cookies.
Ingredients
- 1/4 cup vegan buttery spread
- 1/2 cup date sugar (you could also use Xylitol if diabetic, or brown sugar in a pinch)
- 1 egg (or 1 “flax” egg if you don’t eat eggs), beaten
- 3/4 cup old-fashioned oats
- 1 cup ground almond meal
- 1/4 tsp sea salt
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 2 tbsp hemp seeds (optional)
- 2 tbsp goji berries
- 2 tbsp vegan chocolate chips
- 1tsp Apple Cider Vinegar
Instructions
- Pre-heat the oven to 350 F or 325 F (convection)
- Cream the spread and sugar together in a large bowl. Add the egg, slowly while you continue to mix/beat.
- Mix all the dry ingredients in a bowl – add to the wet ingredients and combine well. Mix in the apple cider vinegar.
- Line a baking sheet with parchment paper.
- Spoon dollops of the batter onto the tray about 3 inches apart.
- Bake for 12-14 minutes.
- Remove from oven and leave to cool before inhaling!
