Healthiest Ever Winter Salad

I call this “HEALTHIEST ever” salad because it is FULLY LOADED with anti-cancer veggies, and is crunchy and delicious. Kale and Cauliflower guard against all kinds of cancer, and walnuts are especially preventative against breast cancer. I’ve also added hemp seeds for your omega 3 boost, and goji berries to keep your eyes strong.

Ingredients:

  • 1 bunch of Dino Kale, stripped of stalks and shredded
  • 1/2 purple cauliflower (or regular if you can’t get purple), grated with a cheese grater
  • 1/2 cup raw walnuts
  • 1/4 cup raw hemp seeds
  • A handful of goji berries
  • 1/2 Avocado, sliced (optional topping)

Dressing: I just dressed my salad with a little good quality Extra Virgin, and a generous squeeze of Meyer lemon. I use Meyer lemons all the time when in season because they add a beautiful sweetness to the dressing.

Instructions:

Simply assemble all the ingredients. Dress and toss really well. Serve with warm sprouted grain or spelt pita bread.
