GREEN TEA LATTE

I have spent the last few days perfecting my green tea latte and I think I’ve finally nailed it! Matcha green tea is a very concentrated form of green tea (a fine powder), which is extremely rich in polyphenols (anti-oxidants). It also has a wonderfully grassy taste and I think works beautifully in a latte. However, there are various steps that you need to take to make it perfect:

First off, make sure you buy a really good quality Matcha. I love Got Matcha. The matcha powder they typically use the coffee shop will be low-quality. They always mix it with a lot of sugar and syrup too, which makes for a sickly and unhealthy drink. Much better to make your own.

Secondly, you are best off having the right tools, especially if it’s something you know you’ll make a lot. You need a bamboo matcha whisk ( a regular whisk will suffice is needs be) and a large latte cup. If you really want to push the boat out, buy one of these Lupicia gorgeous matcha bowls.

Bring filtered water to a boil and let it stand for a couple of minutes.

Meanwhile place 1tsp matcha powder in your cup or bowl. I like to add a sweetener but as I don’t want to use sugar, I think Xylitol is the perfect substitute. I add 1tsp of xylitol. Cover it with no more than 2 inches of the boiled-water. Immediately start vigorously whisking. If you have the bamboo matcha whisk, you need to whisk in a zig-zag pattern. Keep whisking until you have created a foam on the surface of the tea.

I love to add either almond or coconut milk, but it need to be heated because you want your latte to be really warm. Either heat 3/4 of a cup of your chosen milk in the microwave or a pan. Stir it into the foamy matcha and you are set.
