Gorgeously Green Gazpacho

I’m obsessed with this new Gorgeously Green Gazpacho recipe. Try this green-rich version of the summer classic soup – a great alkalizing soup, which will be perfect for a Labor day brunch or dinner.

Serves 4

  • 2 cups chopped Romaine lettuce leaves
  • 2 cups spinach leaves
  • 2 cups chopped tomatoes
  • 2 cups veggie or chicken broth
  • 3 scallions, diced
  • 1 medium cucumber, peeled and diced
  • 1tbsp fresh parsley
  • 1/2 cup sour cream (more to garnish)
  • 1tsp fresh mint leaves
  • 1/2tsp sea salt
  • 1/2 tsp freshly ground pepper

Place the lettuce, spinach, tomatoes, and broth in a blender (you’re in luck if you have a Vitamix because in mine it took 15 seconds to whizz up). Blend until smooth. Pour into a large bowl and add the rest of the ingredients. chill for at least an hour before serving.
