DIY Healthy Peanut Butter Cups

Healthy sugar-free peanut butter cups

 

I love chocolate, I love organic peanut butter, and I love a treat that I can indulge in during the day, or even after a workout – a treat that almost passes for the junky Reese’s like cups that many of us grew up with. I actually had an American boy that I was in love with at boarding school when I was ten, and his Mom would send him boxes of Reeses’s Peanut Butter Cups, which he sometimes shared!

Ingredients:

  • 4tbsp coconut oil
  • 1/2 cup date sugar
  • 1/4 cup cacao powder
  • 1 tbsp vegan protein powder
  • 1 tsp vanilla extract
  • 1/2 cup organic crunchy peanut butter
  • 1 tbsp Xylitol

Instructions:

  1. Heat the coconut oil and sugar over a double-boiler until sugar crystals have dissolved. Remove from heat.
  2. Whisk in the remaining ingredients.
  3. Pour into mini muffin cups and freeze for 3o minutes.

Store for up to 2 weeks in the freezer. I recommend taking them out about 30 minutes before you chow down. They’re also fine for a day or so in the fridge.
