Crunchy Super Food Salad

INGREDIENTS:

  • 2 cups finely shredded Kale
  • 1 cup grated cauliflower
  • 1 yellow bell pepper, finely cubed
  • 1 mango, finely cubed
  • 1 cup green olives, finely cubed
  • 1/2 cup capers
  • 1/2 cup flat leaf parsley, minced

Dressing:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 garlic clove crushed
  • 1 shallot, minced
  • 1/2 tsp dijon mustard
  • 1 tsp raw honey
  • Sea salt and pepper to taste.
