INGREDIENTS:
- 2 cups finely shredded Kale
- 1 cup grated cauliflower
- 1 yellow bell pepper, finely cubed
- 1 mango, finely cubed
- 1 cup green olives, finely cubed
- 1/2 cup capers
- 1/2 cup flat leaf parsley, minced
Dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1 garlic clove crushed
- 1 shallot, minced
- 1/2 tsp dijon mustard
- 1 tsp raw honey
- Sea salt and pepper to taste.
