Coconut Chia Pudding

Ingredients:

  • 1 cup unsweetened coconut milk
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon organic maple syrup*
  • 1/4 cup chia seeds
  • Fresh seasonal fruit or slivered almonds and goji berries

Directions:

  1. Combine the coconut milk, vanilla extract, maple syrup, and chia seeds in a glass container with an airtight lid. Place the mixture in the fridge. After about 30 minutes, stir it again, then replace the lid and leave it overnight. When you are ready to eat your pudding, spoon it into a bowl and top it with fruit or almonds and goji berries.
  2. Serves 1
  3. *You can use an alternate sweetener such as stevia or monk fruit powder, but I do like the nutty taste of the maple syrup.
