Coconut Chia Overnight Oats

My daughter and I are obsessed with overnight oats. We fill our mason jars on Sunday, and enjoy them all week. They are full of protein, fiber, Omega 3 fatty acids and anti-inflammatory ingredients. And we both think they taste as good as dessert. If we don’t eat them for breakfast, they make a perfect afternoon snack. Our latest concoction is our Coconut Chia Overnight Oats. I made a batch last week, and I’m making it again today:)

Coconut Almond & Chia Overnight oats

Ingredients for Coconut Chia Overnight Oats (enough to fill a large 16 ounce Mason jar)

  • 1.5 cups Bob’s Red Mill gluten-free, organic old-fashioned oats
  • 1 cup unsweetened almond milk
  • 1/2 cup of unsweetened coconut milk (or any plant-based milk you prefer)
  • 2 tsp date or maple syrup (optional)
  • 1 tsp ground turmeric
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground cinnamon
  • 2 tsp chia seeds
  • Toppings: Baked coconut chips (obsessed!), toasted nuts, berries

Instructions for Coconut Chia Overnight Oats

  1. Place oats in the jar
  2. Place the remaining ingredients in a small bowl or measuring cup and whisk well.
  3. Pour liquid into the Mason jar, and use a fork to dig and mix!
  4. Screw on lid
  5. Leave overnight.
  6. When you are ready to eat, scoop out desired amount and top with toppings of your choice. For an extra treat, you could mix in a little Better Than Half, which is my new thing!!

Your coconut chia oats will store beautifully in the fridge for up to 5 days.
