My daughter and I are obsessed with overnight oats. We fill our mason jars on Sunday, and enjoy them all week. They are full of protein, fiber, Omega 3 fatty acids and anti-inflammatory ingredients. And we both think they taste as good as dessert. If we don’t eat them for breakfast, they make a perfect afternoon snack. Our latest concoction is our Coconut Chia Overnight Oats. I made a batch last week, and I’m making it again today:)
Ingredients for Coconut Chia Overnight Oats (enough to fill a large 16 ounce Mason jar)
- 1.5 cups Bob’s Red Mill gluten-free, organic old-fashioned oats
- 1 cup unsweetened almond milk
- 1/2 cup of unsweetened coconut milk (or any plant-based milk you prefer)
- 2 tsp date or maple syrup (optional)
- 1 tsp ground turmeric
- 1/2 tsp ground black pepper
- 1/2 tsp ground cinnamon
- 2 tsp chia seeds
- Toppings: Baked coconut chips (obsessed!), toasted nuts, berries
Instructions for Coconut Chia Overnight Oats
- Place oats in the jar
- Place the remaining ingredients in a small bowl or measuring cup and whisk well.
- Pour liquid into the Mason jar, and use a fork to dig and mix!
- Screw on lid
- Leave overnight.
- When you are ready to eat, scoop out desired amount and top with toppings of your choice. For an extra treat, you could mix in a little Better Than Half, which is my new thing!!
Your coconut chia oats will store beautifully in the fridge for up to 5 days.
