Confession: Sometimes I wake up in the morning craving a piece of chocolate cake. I’m sure I’m not the only one. So, I created this Cocoa Dream Indulgent Smoothie to help fight that chocolate-cake-for-breakfast urge. The soaked cashews blended with the dates gives this smoothie the most wonderful consistency, and the cocoa and goji berries hit every mark on the sugar craving checklist. This smoothie is great for kids too – Just tell them it’s a milkshake 🙂
INGREDIENTS
- 3/4 c. raw, dry cashews (soaked overnight)
- 8 oz cold water
- 1/2 c ice
- 1 tbsp raw cocoa
- 1 tbsp goji berries
- 4 pitted dates
A NOTE ABOUT THIS SMOOTHIE: Consistency is everything. My advice is to go slow on the liquids, to avoid making the smoothie too runny, because somewhere between the ice and the soaked cashews, you may end up with too much liquid in there already.
DIRECTIONS
- Drain and rinse your soaked cashews.
- Add cashews, ice, cocoa, goji berries and dates to the blender.
- Begin blending, adding water slowly to achieve desired consistency.
- Serve, topping with cocoa nibs and goji for effect
