Cherry Chia Vegan Ice Cream

Missing regular cow’s ice cream this week? I know it’s HOT out there, so don’t despair because I’ve come up with this crazy good ice cream, which will make you feel amazing after eating. You know you gross you feel after downing a pint of B & J’s ice cream? Not this creation, which is filled with ingredients that will make your body zing and skin glow. Oh – and you don’t need an ice cream maker either!

Ingredients:

  • 1 cup raw cashews, soaked overnight
  • 2 cups water
  • Pinch of sea salt
  • 1 carton So Delicious Lite Culinary Coconut Milk
  • 1 tsp vanilla extract
  • 6 dates, pitted
  • 2tsp chia seeds
  • 1 cup fresh cherries, pitted

 

Instructions:

  1. Blend cashews, water and salt in a high speed blender until totally smooth (cashew milk).
  2. Add the coconut milk, vanilla extract and dates, and blend for another few seconds.
  3. Stir in the Chia Seeds, and set aside for 15 minutes.
  4. Pour the mixture into ice cube trays – I use the jumbo cubes. Freeze for about 3 hours until it is just getting frozen, and when you stick a fork in it, it’s kind of like very thick icy mush. If you over-freeze and it gets too hard, just leave on your counter to thaw a little.
  5. Empty cubes into a bowl, smoosh up with a potato masher, and stir in the cherries. If you are feeling a little naughty, you could add some vegan chocolate chips too!

You can always re-freeze it in an airtight container – but I bet you’ll eat the whole thing before you get to that!
