I love a brownie, but obviously need a very healthy twist to make it Sophie-friendly. And I think I have it in these sweet, chewy bite-size treats. I will say that I have cheated a bit because I used a brownie base mix, but the additions take it into Sophie territory. I also do NOT follow the ingredients-to-add directions on the back of the packet, and don’t recommend you do either. I know that you will love my black bean brownie bites as much as my family…who scarfed down a try before they’d even cooled (and they didn’t even know there were beans in them!)
Ingredients
- I bag/box gluten-free brownie mix. I highly recommend Bob’s Red Mill Mix because it’s freaking delicious. There is a little sugar, but not too much.
- 3 flax eggs (3 tbsp of ground flax seed mixed with 3.5 tbsp of warm water & left to stand for 15 minutes).
- 1 cup of black beans (I used Eden Foods Black Soy Beans, which were perfect)
- 1 cup walnut pieces
Instructions
Mix everything up really well and spoon batter into mini muffin cups or a heart-shaped muffin pan.
Bake for 15 minutes (if they are mini) – 25 minutes if regular size muffin cups.
Allow them to cool before anyone gets their mitts on them!!!!
