Ingredients:
- 1 cup old-fashioned oats
- 2 tablespoons ground flaxseeds
- 2 tablespoons pumpkin seeds
- 2 tablespoons sunflower seeds
- 2 tablespoons sliced almonds or pecan pieces
- 2 apples
- 1 teaspoon lemon juice
- 1 cup plain or coconut yogurt
- 4 dates, pitted and chopped
- Fresh berries or tropical fruits, depending on the season
Directions:
- The night before, place the oats in a bowl and cover them with filtered water (plus an extra inch of water). Place the seeds in a small bowl and cover with filtered water. Let both soak overnight.
- In the morning, toast the nuts in a hot, cast-iron pan. Peel and grate the apples and mix them into the soaked oats, then stir in the lemon juice. Add the nuts, seeds, and yogurt, and finally top with fresh fruit.
