Since 2007, the USDA has passed through a regulation that all raw almonds produced in the U.S. must be pasteurized. Unfortunately, this process involves a chemical called propylene oxide (PPO), which is a potential carcinogen. Many organic growers use steam to sterilize their almonds instead. I advocate eating “raw” almonds in the G.G. Diet, so this “Steaming” method makes it hard to find a completely raw almond. Raw nuts contain the full quota of enzymes and nutrients, which make them such a healthy food. Heat can destroy many of these enzymes. That being said, make sure you always buy organic almonds over conventional, even if they’re not completely raw. Do be wary where you purchase your nuts from, as many stores/companies still label their nuts as “raw” when in reality they’re not. I like Living Nutz, as they sell truly raw nuts, which are imported from Europe. They’re delicious and well worth the effort of ordering online.

Reposting as error in questions. Looking for the best source to buy almonds you mentioned on Nov 22 about California nuts and later mention Living Nutz. Which do you reccomend. I did look at California and they don’t use PPO in thier processing but theya aren’t Organic and couldn’t tell if they are raw. Thanks
if I find them green, does that mean they were not yet pasteurized?
