These spicy vegan chickpea nibbles are a perfect lunchbox snack for kids and adults. I love these chickpea nibbles because they are super easy to make and are the perfect healthy on the go snack. Obviously adjust the amount of spiciness to suit your or your children’s taste buds. Remember, chickpeas (aka Garbanzo beans), are full of nutrition and compounds that are especially good for those who are insulin resistant. Enjoy!
Ingredients
- 2 cans garbanzo beans
- 1 tbsp Balsamic Vinegar
- 2 tbsp Tamari sauce
- 2 tbsp of Yacon or Maple Syrup (go for Yacon if Diabetic)
- 1/2 tsp Cayenne pepper (optional)
Instructions
- Preheat oven to 400 F.
- Line baking sheet with parchment paper.
- Having mixed the garbanzo beans in the marinade, spread them evenly over baking sheet.
- Bake for 30-35 minutes, turning the chickpeas once or twice during cooking. The marinade should be completely absorbed by the end of the cooking time.
- Remove chickpeas from oven and allow to cool. They will be tender, not crunchy.
- Eat them while still warm or at room temperature.
- Store them for up to 1 week in a sealed container in the fridge.
