Simple Tabouleh

This simple tabouleh is a traditional Moroccan recipe that couldn’t be easier. The common mistake is that not enough parsley is used. Make sure you use flat-leaved parsley. It makes a wonderfully healthy lunch, served with warm whole wheat pitta.

Ingredients 

  • 1cup bulgur wheat or cous cous
  • 2 large ripe tomatoes, chopped
  • 4 scallions, trimmed and chopped
  • 2 cups flat-leaf parsley, roughly chopped
  • 1/2 cup hemp seeds (optional)
  • 1/2cup mint, chopped

Dressing

  • 1 garlic clove, crushed
  • 1/4 tsp cinnamon
  • 1/4 tsp turmeric
  • Sea salt and freshly ground pepper
  • 2 tbsp lemon juice
  • 3 tbsp extra virgin olive oil

Instructions

  1. Prepare the bulgar wheat or cous cous, according to directions on box.
  2. Add the scallions, tomatoes, mint, hemp seeds and parsley, and combine well. To make the dressing, add the garlic, cinnamon, turmeric, salt and pepper, to the lemon juice and stir, Then slowly add the olive oil.
  3. Combine the dressing with the salad and enjoy with some beautiful black olives.
  4. Enjoy your simple tabouleh!
