There’s not one of Elana’s recipes that’s failed for me – and that’s saying quite a lot when you are talking about making gluten-free cookies, pancakes and the rest. I absolutely love her blog, and am now thrilled that she has 3 wonderful cookbooks out. The first is Paleo Cooking from Elana’s Pantry, which provides simple, yet very tasty dishes for the Paleo girl/guy, but my absolute fave is her Gluten-free Almond Four Cookbook:I’m a big fan of almond flour instead of many of the more “beany” gluten-free flours out there because of it’s sweet flavor and light texture. Elana’s recipes, which employ the liberal use of almond flour (aka: Almond Meal,) supply you with plenty of melt-in-your-mouth sweet treats, which even a celiac can enjoy.
Elana’s Gluten-free Cupcake book is her third, and is a must-have for any cupcake-lover. Even if you’re not Celiac or gluten-sensitive, her cupcake recipes are to-die-for. I’ve never been a huge cupcake girl because I typically find the sponge a bit to dry/heavy, however, if I bake a tray of Elana’s cupcakes, I have to hide a private stash from the rest of the family – soooooooo good!
