Want to satisfy your craving for a slice of holiday pie without the need to bake? These scrumptious “pie in a glass” smoothies will tickle your taste buds and get you in the festive spirit in less time than it takes to preheat your oven!

Best of all, these recipes are all vegan, gluten free, and use whole foods and natural sweeteners, so you don’t have to “coat-check” your colon at the party.
A few notes about the recipes:
I have found that raw cashews replicate the rich buttery flavour of pie pasty in vegan smoothies beautifully. However, if you are dealing with nut allergies, or not partial to cashews, you could always substitute the cashews with raw blanched almonds and water, or soy milk, rice milk or hemp milk. You will get a smoothie with a slightly different personality, but it will still be delicious.
You can also use any sweeteners to heighten the flavours like dates, maple syrup, raw agave, organic cane sugar, or stevia.
You can also boost the nutritional profile of any of these blends by adding in a couple of handfuls of some mild tasting greens like spinach or romaine lettuce. You can’t even taste them, and it is a great way to sneak some greens into your kids!

Feel free to play, and make these blends your own. Serve them in martini glasses or little shot glass servings for gorgeous holiday presentation.

VEGAN APPLE PIE IN A GLASS

 

This blend captures everything I love about a sensational piece of apple pie – creamy, buttery pastry, rich sweet apples, and just a hint of cinnamon. Who doesn’t love a hot slice of steaming apple pie with a scoop of vanilla ice cream on the side? This smoothie captures the flavour of that perfect bite when the ice cream has slightly melted into the pie. Incredible.

 

  • 2 cups home made raw cashew milk
  • 1 overfilled cup of stewed organic apples or unsweetened pure organic applesauce
  • 3 pitted dates or 3 Tbsp raw agave, or more to taste
  • 2 tsp natural vanilla extract
  • 1/2 tsp ground cinnamon
  • pinch Celtic sea salt
  1. Throw everything in your Vitamix and puree until smooth and creamy. Sweeten to taste and devour.
  2. Makes about two 8-ounce glasses.

 

MAPLE PECAN PIE SMOOTHIE

 

This scrumptious little concoction does every self-respecting bite of homemade pecan pie justice with one sip. The pecan milk adds that hint of a nutty pastry flavour, and the cinnamon and vanilla perfect the blend. I have only used 2 tablespoons of maple syrup to keep the sugar content down. I find this is just enough to bring out the natural sweetness in the bananas, take the edge off the pecans, and really let them sing. But feel free to sweeten the deal. Either way, this pie in a glass is to die for.

 

  • 1 cup raw pecans soaked for 2 hours or more (soaking is optional)
  • 2 cups filtered water
  • 2 frozen bananas
  • 2 Tbsp pure maple syrup
  • 2 tsp natural vanilla extract
  • 1/2 tsp cinnamon
  • pinch Celtic sea salt
  1. Throw all the ingredients in your Vitamix and puree until smooth and creamy.
  2. Makes two 8-ounce glasses.

 

SWEET POTATO PIE SMOOTHIE

 

This sweet potato pie creation is scrumptious. But be warned…it is very rich! A little goes a long way, and I always share it with a friend. This little blend is fantastic if you feel like something decadent during your healthy holiday eating regime. It tastes like a treat without being too naughty. I like to use orange sweet potatoes to get a nice depth of flavour. The maple syrup adds a touch of magic, and the spices round out the flavours with some warmth and festivity. You could always add a teaspoon of pumpkin pie spice to make this vegan sweet potato smoothie more affordable if you don’t want to purchase each individual spice. Similarly, you could use soy milk for people with nut allergies, or rice milk to accommodate multiple food allergies.

Either way, this vegan sweet potato pie smoothie is divine!

 

 

  • 1 ½ cups mashed cooked orange sweet potato or yams
  • 2 cups almond milk OR rice milk or soy free for soy and nut allergies
  • ½ cup ice
  • 1 fresh or frozen banana
  • 3  or 4 Tbsp maple syrup depending on your taste preference
  • 1 tsp natural vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp ground nutmeg
  • pinch Celtic sea salt
  1. 1.    Throw all the ingredients in your Vitamix and puree until smooth and creamy.
  2. 2.    Makes about two 8-ounce glasses.

 

 

RAW LEMON CHEESECAKE SMOOTHIE

 

Turn lemons into “lemon cheesecake” in seconds with this raw vegan smoothie blend that tastes just like a melted lemon cheesecake in a glass! You would never guess this is dairy free. I added a scoop of vanilla protein powder to this smoothie, as it adds a little extra magic. But this is optional, and the smoothie tastes fantastic without it. This lemon cheesecake blend is smooth, creamy, rich, and decadent. The recipe makes one 8-ounce glass. But I like to serve it in shot glasses for dessert and share it with friends. YUMMO!

 

 

  • 2 cups ice
  • 1 cup filtered water
  • ½ cup raw chopped pitted dates
  • ¼ cup raw cashews
  • ¼ cup lemon flesh (1 whole small lemon) peeled and pips removed
  • 1 medium banana (fresh or frozen)
  • 5 Tbsp freshly squeezed lemon juice
  • 1 Tbsp Sprout Living Epic Protein Vanilla Lucuma Powder (*optional)
  • 1 tsp non alcoholic vanilla extract
  • ½ tsp freshly grated lemon zest
  • pinch Celtic sea salt
  1. Place all ingredients in your Vitamix and puree until smooth and creamy.
  2. Tweak flavours and ice to taste.
  3. This fills an 8-ounce glass but serves 4 – 8 people served in shot glasses for dessert. It is very rich!
  4. You could also thicken this with chia seeds and make a raw vegan lemon cheesecake pudding. YUMMO!

 

 

BANANA COCONUT CREAM PIE SMOOTHIE

 

What a festive way to drink your greens wrapped up in a holiday pie! Whilst this raw vegan coconut cream pie smoothie is not the most low calorie green smoothie I have ever created, it certainly has the”WOW” factor. This smoothie is all about festive fun, and a great example of how you can boost the nutritional value of sweet smoothies with mild-tasting greens like romaine lettuce and spinach. I deliberately used romaine here, as I didn’t want it to be a vibrant colour. That way, you can say the slight green tinge is because of the delicious ripe bananas! Make sure you use really ripe bananas or freeze ripe bananas to get the most out of their natural sweetness. Then you won’t have to add any dates or stevia. If you want to make this nut free, you could use soy milk or rice milk in place of the cashews and water. You won’t get exactly the same flavour, but it still tastes pretty spectacular. This smoothie is a stunner, a winner, and not to be missed! WOW!

 

 

  • 2 cups chopped romaine lettuce
  • 4 large fresh or frozen ripe bananas (about 4 large bananas)
  • 2 cups raw coconut water or filtered water
  • ½ cup dried unsweetened shredded coconut
  • ¼ cup raw cashews
  • 1 or 2 chopped pitted dates  or 4 drops of liquid stevia (optional if needed to sweeten fruit)
  • 1 tsp non alcoholic vanilla essence
  • pinch of Celtic sea salt

1.Place all the ingredients in your Vitamix and puree until smooth and creamy.

2.Tweak flavours to taste – you might want to add dates or stevia to heighten the banana flavour depending on the ripeness of your fruit.

3.Makes three 8-ounce glasses. YUMMO!
