Pear Pecan Gluten Free Muffins

This is one of my favorite, crazily healthy muffin recipes for pear pecan gluten free muffins and I hope you enjoy it as much as my family and I do! I’m in heaven when pears are in season because I love to bake with them.

This recipe serves six to eight.

Ingredients 

  • 3 tablespoons raw virgin coconut oil
  • 1 small banana
  • 3 organic eggs or 4 1/4 teaspoons Ener-G Egg Replacer plus 6 tablespoons water
  • 1/4 cup coconut flour
  • 1/4 cup almond meal
  • 2 tablespoons ground flax seeds
  • 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 pitted dates
  • 1 teaspoon ground cinnamon
  • 3/4 cup unsweetened coconut milk
  • 1 large pear, peeled, cored and cubed
  • 1/2 cup pecans, roughly chopped

Instructions 

  1. Pre-heat the oven to 400 degrees F.
  2. Place all the ingredients except for the pear and pecans in a food processor, and process until smooth.
  3. Mix in pear and pecans. Pour the batter into a greased muffin pan or muffin cups.
  4. Bake for 18 to 20 minutes or until a toothpick comes out clean.
  5. Enjoy your super healthy pear pecan gluten free muffins!
