This is one of my favorite, crazily healthy muffin recipes for pear pecan gluten free muffins and I hope you enjoy it as much as my family and I do! I’m in heaven when pears are in season because I love to bake with them.
This recipe serves six to eight.
Ingredients
- 3 tablespoons raw virgin coconut oil
- 1 small banana
- 3 organic eggs or 4 1/4 teaspoons Ener-G Egg Replacer plus 6 tablespoons water
- 1/4 cup coconut flour
- 1/4 cup almond meal
- 2 tablespoons ground flax seeds
- 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 4 pitted dates
- 1 teaspoon ground cinnamon
- 3/4 cup unsweetened coconut milk
- 1 large pear, peeled, cored and cubed
- 1/2 cup pecans, roughly chopped
Instructions
- Pre-heat the oven to 400 degrees F.
- Place all the ingredients except for the pear and pecans in a food processor, and process until smooth.
- Mix in pear and pecans. Pour the batter into a greased muffin pan or muffin cups.
- Bake for 18 to 20 minutes or until a toothpick comes out clean.
