This crunchy salad is great for your skin, digestion and immune system. It’s also very pretty!
2 cups dandelion greens, washed and dried
1 cup violet leaves
1/2 cup violet flowers
1 cup mixed salad greens
1/2 cup crumbled feta or goat cheese
1/4 cup slivered, toasted almonds
Dressing:
2 tbsp EVOO
1 tbps fresh lemon juice
1/2 tsp raw honey
sea salt to taste
Simply assemble the salad and serve the dressing on the side.
Where can I find edible violets?
You can find them at most gardening centers and nurseries. The regular violets that they sell are edible.
