This wonderful recipe for meatless sloppy Joes is contributed to us by my great friend Megan Lawson, who has a Whole Food Plant Based Blog, MegUnprocessed, that has some great recipes. Megan has a knack of taking traditional American food and turning it into vegan food that even the most hardcore carnivore would appreciate.
On a side note, Megan, who is also a Holistic Nutritionist, managed to get her Dad completely off Lipitor by simply following her plant-basted dietary recommendations. This way of eating works – it really does!
This Sloppy Joe recipe is a great one to add to your weekly meat-free repertoire.
Ingredients
- 7 Baby Portobello Mushrooms
- 1 cup Walnuts
- 1 can (6oz) Tomato Paste
- ½ Onion, chopped (I used red, but can sub yellow or white)
- 2 Garlic Cloves, minced
- 1 tbsp Tamari Sauce (or Liquid Aminos)
- 1 tsp Chili Powder
- ½ tsp Ground Mustard
- ¼ tsp Paprika
- ¼ cup Water
Instructions
- First get all of your seasonings ready. This isn’t meat so you don’t have to cook it for long on the stove
- Then pulse the mushrooms and walnuts in the food processor and set aside
- In a medium skillet sauté ¼ of the onions and garlic for 3 – 4 min
- Add in the mushroom and walnut mixture and stir
- Then add all the seasonings, tomato paste, tamari, rest of the onions and water stirring them all together
- Stir everything until heated through
- Serve on Ezekiel bread or lettuce leafs
- Enjoy your delicious meatless sloppy Joes!
