I so hope you’ve been watching my new YouTube series, One Food, Two Nerds with Dan Kohler! In each episode, I put on my health-nerdiest hat to team up with Dan (self proclaimed history and science nerd)  to explore the history, nutritional benefits and uses of some of today’s most talked about foods in healthy eating.

In the last episode, we discussed Lucuma powder. Lucuma, also known as the “Gold of The Incas,” is the definition of super food. It is full of amino acids, vitamins and minerals, and is naturally gluten free.

You’ve probably seem Lucuma sold in powder form. Lucuma powder is an awesome sweetener – I use it in A LOT of my baking. Although it’s not off-the-charts sweet, its subtle nutty flavor will absolutely satisfy your sweet tooth, without ruining your healthy routine.

We developed this granola recipe because Lucuma is a great way to start your day – the amino acids, vitamins and minerals in this superfood make it the perfect way to kickstart your morning with a big boost of nutrients!!

Lucuma Granola
INGREDIENTS

  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 3 cups rolled oats
  • 1/2 cup pepitas
  • 1/3 cup raw almonds
  • 1/3 cup lucuma
  • A few dashes of cinnamon

DIRECTIONS

  1. Over a low heat, melt your coconut oil and maple syrup in a sauce pan. It won’t take long!
  2. In a separate bowl, combine oats, pepitas, almonds, lucuma power and cinnamon.
  3. Fold in your coconut oil and maple syrup mixure, distributing evenly.
  4. Spread granola onto a baking sheet lined with parchment paper.
  5. Bake at 350 degrees for 20 minutes, turning once!
