Greek Salad

Ingredients:

Salad

  • 6 large organic tomatoes, roughly chopped
  • 6 organic Persian or regular cucumbers, roughly chopped
  • 1 cup pitted Kalamata olives
  • 1/2 red onion, thinly sliced
  • 4 ounces feta or soy cheese, cubed

Dressing

  • 1 cup extra virgin olive oil
  • Juice of 1 lemon
  • Pinch of dried oregano
  • Sea salt and cracked pepper, to taste

Directions:

  1. Combine all the salad ingredients in a large bowl. In a separate bowl, whisk together the dressing ingredients. Drizzle the dressing over the salad and toss carefully, making sure everything is well coated.
  2. Serves 4
