Ingredients:
Salad
- 6 large organic tomatoes, roughly chopped
- 6 organic Persian or regular cucumbers, roughly chopped
- 1 cup pitted Kalamata olives
- 1/2 red onion, thinly sliced
- 4 ounces feta or soy cheese, cubed
Dressing
- 1 cup extra virgin olive oil
- Juice of 1 lemon
- Pinch of dried oregano
- Sea salt and cracked pepper, to taste
Directions:
- Combine all the salad ingredients in a large bowl. In a separate bowl, whisk together the dressing ingredients. Drizzle the dressing over the salad and toss carefully, making sure everything is well coated.
