Ingredients:
Salad
- 1 unpeeled apple, diced into large chunks
- 1 cup thinly chopped celery
- 1 cup seedless grapes, halved
- 1/2 cup pecans, toasted
- 3 cups baby spinach
Dressing
- 1/2 cup plain yogurt
- 1/3 cup vegan mayo
- 1 teaspoon grated lemon zest
- 1 tablespoon fresh lemon juice
- 2 teaspoons curry powder
- 1/2 teaspoon agave nectar or honey
Directions:
- Combine all the salad ingredients in a large bowl. In a separate bowl, whisk together the dressing ingredients. Drizzle the dressing over the salad and toss carefully, making sure everything is well coated.
