If there was ever a cancer-fighting cookie, this is it!! It’s loaded with anti-cancer nutrients (walnuts, goji berries etc), it’s very high in protein, very low in sugar, and it’s carb and gluten-free. This recipes was inspired by a blog that I love – MegUnprocessed. I took her recipes and made a few tweaks to make it mine. Enjoy!
Yields about 14 -16 small cookies
INGREDIENTS
- 1 can organic garbanzo beans, rinsed and drained
- 1/2 cup dried goji berries
- 6 dates, pitted
- 1/2 cup flax seeds
- 3 1/2 tbsp almond butter
- 1 tbsp orange zest
- 2tsp orange juice (straight from an orange, not a carton!)
- 1tsp baking soda
- Tiny pinch of sea salt
- 1/2 cup walnut pieces
- 1/2 cup vegan chocolate chunks/morsels
DIRECTIONS
- Pre-heat oven to 350 degrees F
- This a a dump-in-the-processor recipe, which I love.
- Place all the ingredients except the walnuts and chocolate in a processor and process until you have a smooth cookie dough. Remove blade and stir in chocolate and walnuts.
- Place gold ball size dollops on a parchment-lined baking sheet. Bake for about 20 minutes or until the tops are lightly browned.
Here’s the most important thing, when they are cool, freeze them. You can eat them straight out of the freezer as the dough kind of stays soft, and the flavors are stunning when the cookie is cold.
